Spinach Pie

- 1 package (10 oz.) frozen spinach
- 1 1/2 cup chopped onion
- 3 cloves garlic, chopped
- 2 Tbsp oil
- 3 cups crumbled tofu (soft or silken tofu works best)
- 1 Tbsp lemon juice
- salt and pepper to taste
- 1 unbaked pre-made pie crust
Preheat oven to 350 degrees.
Cook spinach according to package directions. Sauté onion and garlic in the oil in a large saucepan over medium heat for 3 minutes. Add cooked spinach, tofu, lemon juice, salt and pepper. Continue cooking spinach/tofu mixture for 5 more minutes. Mix well. Pour into pie crust. Bake at 350 degrees for 15 to 20 minutes, until crust is brown. Yield: 8 servings.
