Sloppy Veggie Sandwiches

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2/3 cup dry lentils rinsed and drained
  • 2/3 cup brown rice
  • 1/2 cup chopped onion
  • 1 clove minced garlic
  • 2 Tbsp brown sugar
  • 2 Tbsp mustard
  • 1/2 tsp salt
  • 1/4 tsp red peppers
  • 2 cans veggie broth
  • 1 can tomato sauce
  • 2 Tbsp apple cider vinegar
  • buns

Combine the first 11 ingredients in a slow cooker on the high setting and cook about 3 hours covered or until rice and lentils are done. Stir in vinegar and tomato sauce, cover and cook extra 30 minutes. Serve on buns.
