Chickpea Orzo Pilaf

  • 3 Tbsp olive oil
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 2 cloves minced garlic
  • 1 ½ tsp curry powder
  • 1/2 tsp dried thyme
  • 1 cup uncooked orzo
  • 5 1/2 cups broth (we use veggie of course!)
  • 1 can of chickpeas rinsed and drained
  • 2 Tbsp chili powder

Heat olive oil over medium heat in a large pot. Sauté onion, carrot, garlic, curry and thyme until onion is soft.

Add orzo and sauté until lightly browned. Stir in broth, chickpeas, and chili powder. Bring to a boil. Cover with lid and reduce heat to low. Simmer 12 minute or until orzo fully cooked.

This is delicious immediately, but is even tastier the next day.
